Our favorite on-the-couch binge-watching meal happens to be Pad Thai from our local takeout spot. When we thought about dehydrated meals that were tasty enough for a weeknight, we immediately dreamed of recreating this delivery classic. Never satisfied with the standard, however, we added coconut milk for extra fat and calories, textured veggie protein for, well, protein, and some extra-special spices to make this baby backcountry-ready. It's kinda Pad Thai, kinda curry, and v delicious.
